Happy Happy Joy Joy is the recipe our brewmeister
uses to create a rich stout, a touch "bigger" than the
Guinness that is imported into the United States.
My understanding is that Guinness actually has three different versions of their stout.
I call these Irish stout, English stout, and export stout.
The Irish version is purposefully soured by the introduction of lacto bacilli into
about 10% of the mash, producing a drink for the Irish palette.
This can be easily simulated in homebrewing by addition of a small amount of lactic acid into the finished beer
(40cc of an 88% solution in 10 gallons is more than adequate).
The English version is the non-soured version of the same recipe, yielding a much sweeter
product suitable for tastes in Great Britain.
Happy Happy Joy Joy is brewed to match this configuration most of the time.
The export version has a lower gravity, reducing its body for American tastes.
It is also pasteurized.
